Broccoli, Cauliflower, Blueberry Coleslaw (groceries from last week) and tuna salad. Cheap and easy. Will repeat.
Thursday
Cauliflower rice topped with Saag and Chicken (grilled or throw some chicken breasts & a little seasoning in the Instant Pot & press poultry). Used just a little spinach, a large bunch of mustard greens and a 1 lb bag of collard greens. This meal was amazing. Filling without being a gut bomb. Topped saag with a tiny bit Greek yogurt and ghost pepper salt.
Friday
Steaks and Kale Salad (double recipe; make night before)
Saturday
Fish (from Ryan’s dad) with crunchy salad
Sunday
Butter Chicken. Favorite dish. Quick, easy crowd-pleaser. I typically use two green bell peppers instead of one. Made a double batch this time.
Monday
Slow Cooker Pulled Pork with Homemade Kansas City Style BBQ Sauce on top of baked sweet potatoes. Actually followed the recipe this time, and it was pretty damn good. The homemade sauce is a must.
