Mango Avocado Salsa on Pan Seared Salmon

Monday

Mango Avocado Salsa on Pan Seared Salmon. Doubled the mangos, avocado and cilantro in salsa. Cooked the salmon for about 2.5 mins on the reverse side instead of just 30 seconds. Clean and quick to throw together. Sweetness of the mango paired amazingly with the fish.

Tuesday

Artichoke Lemon Pesto Chicken Pasta. Made this a couple weeks ago. It’s amazing.

Wednesday

Southwest Turkey Sliders over Spicy Avocado Slaw. Turkey patties and slaw sound like a boring meal, but this was surprisingly flavorful and well-balanced. Might add black and/or green olives to slaw next time. Made full size burgers instead of sliders.

Thursday

Sweet Korean Paleo Chicken Thighs with Cauliflower Rice. Mixed together marinade on Wednesday and let chicken thighs marinate overnight. (Can find the gochujang at Sprouts.) Used more chicken than recipe. After baking for 30 mins, broiled at 425 for 10 mins; will broil for 15 mins next time. Garnished with some cilantro in addition to green onions. This will be a go-to recipe.
