Week starting March 9, 2017

Breakfast

Easy Breakfast Casserole. Cut into servings and take with each morning. Trying something new: Omit spinach. Layer instead of mix together. Eat with fresh spinach.

Thursday

Instant Pot Sloppy Joe stuffed sweet potatoes. Drained meat after browning.

Saturday

Pistachio-Crusted Salmon with sliced tomatoes and fresh broccoli drizzled in olive oil & balsamic vinegar. Great way to cook salmon–coat it in Dijon mustard and then crusted it with any kind of crushed nuts. Can’t go wrong.

Sunday

Pernil (Puerto Rican Roast Pork Shoulder) with Spanish Rice (basmati rice, peas, carrots, tbsp tomato paste, tomatoes, jalapenos, green olives, garlic, onion). Fantastic meal.

Balsamic Pot Roast with Kale Salad (double recipe). Use 4 sweet potatoes. Super easy comfort meal. Tastes like a hug.

Thursday

Instant Pot Dal Makhani. Cheap, easy. If you soak the lentils, it turns our mushier but has less of a “gastrointestinal effect.”

  • Grated Parmesan (1 cup)
  • Salmon (2 fillets; on sale $7.99/lb)
  • Bacon (3 slices)
  • Ground beef (2lbs; on sale $2.99/lb)
  • Boneless chuck roast (3lbs; on sale $2.99/lb)
  • Pork shoulder, bone-in/skin-on preferred (6-10lbs; maybe on sale at sprouts for $1.99/lb or Sam’s)
  • Sausage (1 lb)
  • Cilantro (2 bunches)
  • Green onions (2 bunches)
  • Cabbage (1 small head)
  • Kale (2 bunches; on sale $.99/lb)
  • Carrots (1 bag)
  • Potatoes (2lbs)
  • Onions (6)
  • Okra (10 okra)
  • Acorn squash (1)
  • Taro (1lb; need 2 cups)
  • Plantain (1 yellow)
  • Habanero pepper (1)
  • Tomatoes (4)
  • Oranges (4) or Orange juice
