Monday

Leftover Asparagus, Dill & Onion Egg Casserole

Tuesday

Meatloaf (manager’s special from Sprouts) with Fruity Coleslaw (picked up ingredients last week)

Wednesday

Pizza Spaghetti Pie. Legitimate pizza substitute. Used a 9×13 dish instead of 8×8, which I felt was too small. Added some olives. Will add green bell pepper and/or mushrooms next time. Used hot Italian sausage from Sprouts, but could use any ground meat or do an all veggie version. So damn good. Used entire 14 oz jar of pizza sauce instead of just 1 cup. Used whole onion instead of half.

Thursday

Romaine-wrapped burgers with Bacon Lime Sweet Potato Salad. Served burgers with a fried egg on top without lettuce wrapped.

Friday

Cilantro chicken nuggets with Zucchini Cakes. Chicken nuggets are a little messy to make, but the flavor was intriguing.

Sprouts shopping list ($38.15 / 6.20.16)

  • 85/15 ground beef (1½ lbs; on sale $3.99/lb)
  • Italian sausage (1 lb)
  • Ground chicken (1 lb)
  • Bacon (½ lb)
  • Romaine lettuce or green leafy lettuce (1 bunch)
  • Cilantro (1 bunch)
  • Green onions (1 bunch)
  • Sweet potatoes (3)
  • Granny Smith apples (8; on sale $.98/lb) — SNACK
  • Spaghetti squash (1)
  • Eggs (18)
  • Pizza sauce (no added sugar; 8 oz)
  • Baking powder

Need but have at home

Coconut oil, lime (1), olive oil, balsamic vinegar, green onions, fresh dill, red pepper flakes, cinnamon, salt, pepper, onion (½), dried basil, zucchini (2), garlic cloves (2), coconut oil, coconut flour, ginger, white wine vinegar, honey, stone ground mustard, sesame oil
