Monday

Leftover Crockpot Cuban Pork Lettuce Wraps

Tuesday

Grilled Rockfish with Chunky Mango-Ginger Sauce. Using leftover chardonnay from my house instead of buying dry sherry. Grilled about 2 lbs of rockfish in foil packets because the fillets were not super thick. Used 4 mangos. The sauce packed a lot of flavor and paired well with the mild white fish. Solid summer dish. Reheated well the next day for lunch.

Wednesday

Horseradish Crusted London Broil with Creamy Roasted Red Pepper Pasta. The next time London Broil goes on sale, this will be happening again. So good. The pasta was top notch. Used the food processor’s slicing blade to make “noodles,” which gave it a potato au gratin texture that was quite lovely. Sauce was legit.

Thursday

Pork Chops with Garlic Sage Butter with Celeriac Mash. Saving celeriac mash recipe for another time. Didn’t want to mess with Whole Foods. Served chops with leftover Creamy Roasted Red Pepper Pasta. Chops were okay. I didn’t love them.

Saturday

Grilled Pineapple Country Style Ribs (using ribs instead of pork chops) with Fruity Coleslaw. Saving coleslaw for next week. The ribs were delicious.

Sunday

Asparagus, Dill & Onion Egg Casserole. The fresh dill sets this off. Yum. Served with a few slices of grilled chicken for dinner on Sunday.

  • Rockfish (2 lbs or 4 fillets; on sale $5.99/lb)
  • London Broil (2 lbs; on sale $3.99/lb)
  • Country style pork ribs (pick package; on sale $1.99/lb)
  • Pork chops (4; on sale $1.99/lb)

  • Granny Smith apples (8; on sale $.98/lb) — SNACK
  • Celeriac (2) did not find at Sprouts; will pick up at Whole Foods
