Spicy Chipotle Grilled Chicken Drumsticks (marinate night before; use leftover chipotles in adobo from Tuesday) and Mexican corn on the cob

Wednesday

Instant Pot Korean Beef with Indian Fried Dill Potatoes. Restaurant quality. Used sweet potatoes instead of russet.

Thursday

Green Chile Chorizo Cauliflower Casserole (except using ground meat spiced with homemade taco seasoning instead of chorizo; it’s cheaper). Go-to meal.

Friday

Spicy Roasted Chicken (legs) and Paleo Honey Roasted Carrots. Yes, this chicken is a Pioneer Woman recipe, which means there is butter–but I will use way less.

  • Bottom roast (4lbs)
  • Ground turkey (may get at Trader Joe’s)
  • Chicken drumsticks (on sale $.69/lb)
  • Chicken legs (on sale $.69/lb)
  • Cilantro (2 bunches)

  • Carrots (2bags)
  • Sweet potatoes (2lbs)

  • Corn (8 ears; on sale 8/$2)

  • Pre-peeled garlic cloves
  • Chipotle chiles in adobo (1 can; may get at Trader Joe’s)
