Week starting July 11, 2016

Week of recycling recipes. Not trying anything new this week–just going with those that have already proven tasty.

Monday

Huge salad. Used a head of green leafy lettuce (sliced) and everything in the fridge: green & black olives, sliced radishes, chopped tomatoes, diced carrots, chopped cucumbers, banana pepper slices, chopped red de-seeded jalapeno and sliced almonds.

Tuesday

Chipotle Chicken and Green Beans. Used green beans from a co-worker’s garden last time. Hope store-bought doesn’t pale in comparison. Subbed olive oil for avocado oil. Served with sliced tomato.

Sweet Korean Paleo Chicken Thighs with Cauliflower Rice. I don’t love “sweet” entrees, but this is smoky sweet and delicious.

Friday

Crispy Pork Carnitas lettuce wraps (w/romaine lettuce) topped with tomatoes, cilantro, chopped radish, green onions and red jalapenos. Love this blog, a lot. Her Baingan ka Bharta (Indian Eggplant) w/a fried egg is my new favorite dish (below). For breakfast the next day, added an egg on top of the carnitas.

Saturday

Horseradish Crusted London Broil with Creamy Roasted Red Pepper Pasta. This combines two different recipes. Will only make when the meat is on sale. It’s yummy & pretty. I tend to take red pepper flake packets from work to add unnecessary zing. Used leftover London Broil for steak and eggs. (RE: pictures–I’m not a food stylist. I’m just here to eat.)

Sunday

Chicken and sweet potato curry. This is a quick comfort meal.

Sprouts shopping list (weekly ad)

  • London broil (2 lbs; on sale $4.99/Sprouts butcher sliced the size I wanted)
  • Pork loin roast (3 lbs; on sale $1.79/lb)
  • Chicken thighs (large package; split for two recipes)
  • Chicken breasts (1 large package; on sale $1.88/lb)
  • Ginger root (little knob)
  • Romaine lettuce (1 head)
  • Green leafy lettuce (1 head)
  • Green onions (1 bunch)
  • Sweet potatoes (2)
  • Onions (3lb bag)
  • Garlic (3 heads)
  • Apples (8; Granny Smith & Fuji on sale $.99/lb)–SNACK
  • Green beans (1 lb)
  • Cucumbers (2)
  • Cauliflower (1 head)
  • Red jalapeno peppers (4)
  • Serrano peppers (2)
  • Roasted red peppers (1 jar)
  • Almond butter (need ½ cup)–too expensive at Sprouts, pick up at Target or Walmart
  • Coconut milk (2 cans)–trying Dollar Tree’s version bc it was cheap; we’ll see

Need but have at home

Olive oil, chili powder, salt, black pepper, chipotle powder from Savory Spice, cayenne, prepared horseradish, Dijon mustard, zucchini (2), yellow squash (2), garlic powder, onion powder, mustard, powder, green & black olives, radishes, tomatoes, carrots, cucumbers, banana pepper slices, sliced almonds, cilantro, oregano, cumin, bay leaf (1), cinnamon stick (1), lime (1), oranges (2), honey, sesame seeds, gochujang (Korean chili paste; can buy at Sprouts), coconut aminos, sesame oil, curry powder, ground ginger
