Week starting Jan. 9, 2017

Monday

Roast Chicken and Honey Roasted Carrots with few handfuls of spinach. Previously intimidated by whole chickens, but they’re actually super cheap and extremely easy to cook. This meal is homey, delicious and inexpensive.

Tuesday

Simple Herb Crusted Salmon (doing 4 fillets instead of 2) with the arugula salad on this recipe (subbing in spinach). The spinach with simple dressing was fantastic/crave-worthy. The salmon was tasty, but I found the coconut flour/parsley mixture “meh” at best and unnecessary. I’d much prefer to coat the salmon in the dijon and cover with crushed pistachios like this recipe (picture on rigtht).

Wednesday

Supreme Pizza Frittata. Using cast iron skillet Christmas gift for first time. Not hard to do, looks impressive and tastes just like pizza. The arugula on top (not pictured) really made it. Could adjust toppings to preference/availability. Great pizza substitute.

Thursday

White Chicken Chili. Using Instant Pot version of recipe. Will definitely make again. Solid recipe. Topped with a dollup of yogurt.

For a snack, used leftover salmon from Tuesday on some crackers with yogurt and capers for a light version of lox.

Friday

Pressure Cooker Kalua Pig. Finally making this recipe. Keep planning to but getting around to it. Need to pick up some Hawaiian salt from Savory Spice. Forgot to snap a photo. This was the easiest and best way we’ve cooked a pork roast in a long time.

Saturday

Leftover Chili and leftover pig

Sunday

Instant Pot Dal Makhani (lentils). Amazing. Cost less than $3 to make. Used olive oil instead of avocado oil. Only soaked the lentils for a little bit; will do full time next time.

Snack: Instant Pot Applesauce. Needed to get rid of some old apples but didn’t want to toss them. Used 3 Granny Smith and 3 Pink Lady apples. Omitted the oil. Added a dash of nutmeg and some orange zest. Delicious.

Monday

Mushroom Mattar Methi Malai. Made tomato puree with fresh tomatoes (3 Romas, I believe). Used full bag of frozen peas instead of just 1 cup. Ugly, but filling and rich with flavor. Topped with an egg.
