Vegetable Soup (purchased ingredients last week). The recipe does not say when to add the broth and water; should be on step 5. Makes a lot of soup. Ideal meatless winter meal.
Instant Pot Sloppy Joe Meat stuffed baked sweet potatoes. So damn good. Microwaved the sweet potatoes in a potato pouch (had to cook potato longer than potato button on work microwave for lunch the next day).
Saturday & Sunday (made two batches)
Whole Roasted Chicken with Chimichuri Sauce. Big into whole chickens right now. Need a roasting pan to make the sides of chicken crispy; used Dutch oven. Could have done on jelly roll pan, too. Peeled off the skin on legs since it wasn’t as “roasty.” Used more veggies than recipe. They were delicious after cooking in the drippings from the chicken/chimichuri sauce.
