Thursday
No Bean Turkey & Sweet Potato Chili. Doubled recipe. Topped with plain Greek yogurt and fresh jalapeno slices. Tasty and quick to throw together.

Saturday
Instant Pot Buffalo Chicken & Sweet Potatoes. Won an Instant Pot at a Christmas party. So pumped. It’s great. This was an easy first instant pot recipe. Used half of chicken breasts; saved other half for Monday night.
Sunday
Instant Pot Dal Makhani (lentils). Amazing. Cost less than $3 to make. Even better the next day. Used olive oil instead of avocado oil. Doubled tomatoes because I used Romas. I don’t think I’ll soak the lentils next time.
Monday
Instant Pot Chicken Soup with Kale. Everything you want a chicken soup to be in winter. Cozy. Cooked the chicken on Instant Pot poultry setting first using this recipe scaled down for 1.5 lbs. Used twice as much kale to use it up.
