To use up old bananas–Flourless Peanut Butter Banana Oatmeal Cookies. Doubled recipe. Used Jif instead of natural PB, raisins instead of chocolate chips and regular oats instead of quick. Addicted to these. Store in fridge; microwave for 15 seconds.
Breakfast for dinner: Spicy Rosemary Sausage and Potato Breakfast Hash with side of fresh tomato. Used whole serrano (with seeds), and it really packs a nice heat. Filling meal.
Instant Pot Black-eyed Peas and Ham. Both Sprouts and Walmart were out of dried black-eyed peas. Made with navy beans. Comfort meal for the win.
Crock Pot Thai Chicken Soup (may use vermicelli or zucchini noodles; gametime decision). Used zucchini noodles.
Italian Artichoke Bake with Basil Cream Sauce. Makes the house smell incredible while baking. Good for a colder day–heavy/hearty.
Chipotle Dijon Turkey Meatballs with spinach salad or wrapped in green leafy lettuce. Make sauce using Greek yogurt instead of cream.
Green Eggs and Ham Shashuka with Lemon Dill Pesto. Super easy to make. Fantastic flavor.
