Slow cooker paleo jerk chicken (using breasts and less salt than recipe) with roasted asparagus / Megan to put on chicken at lunch.

Breakfast for dinner. Uncured bacon and veggie egg scramble with fruit plate. Throw green onion, mushrooms, jalapenos, spinach and tomato in skillet. Add in three beaten eggs. Move with spatula until done.

Spinach/arugula salad with canned beets, goat cheese, green onion and homemade dressing

Cook ground pork with mushrooms (I used homemade taco seasoning on the mixture). Slice open and remove seeds/innards from green hatch chilies. Stuff with pork and baked at 400 degrees for 10 mins. This recipe will give you an idea, but I didn’t follow it to a tee. Left my chilies whole. Served with jicama slaw.

Brown ground beef with 1 chopped onion. Remove and then sauté 2 chopped zucchinis and 2 chopped yellow squash. Cover for a bit. Add in one chopped tomato and beef/onion. Serve over bed of spinach or on its own.

Cambodian lime ginger honey country style pork ribs (I did not use fish sauce, used soy sauce in place of coconut aminos, and used a tsp of ground ginger instead of fresh) with Asian-style stir fried green beans (I used fresh green beans, less brown sugar and olive oil instead of sesame oil)
