Treat

To use up old bananas–Flourless Peanut Butter Banana Oatmeal Cookies. Doubled recipe. Used Jif instead of natural PB, raisins instead of chocolate chips and regular oats instead of quick. Addicted to these. Store in fridge; microwave for 15 seconds.

Breakfast for dinner: Spicy Rosemary Sausage and Potato Breakfast Hash  with side of fresh tomato. Used whole serrano (with seeds), and it really packs a nice heat. Filling meal.

Korean Paleo Chicken Thighs over cauliflower rice. Put into marinade night before cooking. High on Ryan’s list of favorites. Serve with wasabi finishing sauce from Savory Spice.

Instant Pot Black-eyed Peas and Ham. Both Sprouts and Walmart were out of dried black-eyed peas. Made with navy beans. Comfort meal for the win.

Jerk Rubbed Chicken Thighs with Homemade Mango-Habanero Hot Sauce and simple arugula salad (groceries left over from last week). This is jerk rub such a good seasoning blend to have on hand.

Monday

Sesame Spiced Tuna with crunchy salad (from Trader Joe’s). Bought two large fillets and cut them in half after cooking, which fed two people twice. Don’t have mustard seeds on hand; got only what I need (1 tsp) from Sprouts bulk spice section. Also paired with leftover mango, radishes and tomato slices. Ate leftovers cold the next day with tomato. Delicious and impressive looking.

Chicken Korma with Cauliflower Rice. This was good but not “knock your socks off”/must have again. Solid meal. Used a whole bag of peas because we’re pea lovers. If I make it again, will decrease cinnamon to 1/8 tsp.

Instant Pot Korean Beef with Indian Fried Dill Potatoes. Restaurant quality. Used sweet potatoes in stead of russet. Can’t wait to taste this combo again. Complete departure from the way I typically prepare a rump roast.

Pernil (Puerto Rican Roast Pork Shoulder) with Spanish Rice (basmati rice, peas, carrots, tbsp tomato paste, tomatoes, jalapenos, green olives, garlic, onion). Fantastic meal.

Cauliflower rice topped with Saag and Chicken (throw some chicken tenders & a little seasoning in the Instant Pot & press poultry). Used 1 lbish of spinach, 1lb of mustard greens and a little bit of collard greens. This meal was amazing. Filling without being a gut bomb. Topped saag with a tiny bit Greek yogurt and ghost pepper salt.

Didn’t get to make last week: Maple Chili Pork Tenderloin with baked sweet potatoes and/or Vegan Hoppin’ John. The pork tenderloin I bought at Sprouts last week was green before the “sell by” date. They let me get a replacement free-of-charge when I showed the picture and my receipt. Had hoppin’ John with leftover saag for lunch. Delicious blend.

Instant Pot Pork Carnitas Rice Bowls. Sear pork in Instant Pot on saute setting instead of in skillet. Cooked pork longer than recipe; 68 total minutes. For the pork, I didn’t have sazon, so I used the following:  1/8 tsp each of coriander, cumin, turmeric, garlic powder, kosher salt and oregano; a dash of black pepper; and (I like kick) 1/8 tsp chipotle powder and a dash of habanero powder. I don’t have adobo seasoning, so I think I just used 1/4 tsp cayenne. Loved the flavor–lot of heat without salty taste. Used pork to make loaded wild rice bowls with romaine lettuce, red onion, avocado, cilantro, tomato, jalapeno, lime wedges, black beans (cooked 1 cup dry black beans in instant pot for 50 minutes with 1/2 chopped onion, 3 cloves of minced garlic, some spices and 4 cups of low sodium chicken broth), red bell pepper and red onion sauteed in bacon grease, adobo sauce (mixed a bit of the adobo sauce from the chipotle peppers in adobo with plain Greek yogurt), salsa.

Instant Pot Curried Cream of Broccoli Soup. Used more broccoli than recipe and ghost pepper curry powder. Topped with a dollup of plain Greek yogurt and green onions. Tastes like savory velvet (aka scrumptious). Quick meal to throw together.

Tamarind Coconut Fish Curry over cauliflower rice (rice head of cauliflower in food processor, throw in skillet with some coconut oil & 1/4 cup water, saute over medium heat then cover and let steam for 7 mins). Used striper from Ryan’s dad and 1/2 tsp of liquid tamarind pasted concentrate from Savory Spice instead of tamarind paste. This was pretty great.

Instant Pot Sloppy Joe Meat stuffed baked sweet potatoes. So damn good. Microwaved the sweet potatoes in a potato pouch (had to cook potato longer than potato button on work microwave for lunch the next day).

Instant Pot Butter Chicken with Easy Paleo Naan. Incredible. Can’t wait to eat it again.

Monday

Cracklin’ Chicken with Roasted Green Beans and fresh tomato slices. This was fine. I’d rather not mess with hot oil.

Tuesday

Whole Roasted Chicken with Chimichuri Sauce. Big into whole chickens right now. Need a roasting pan to make the sides of chicken crispy; used Dutch oven. Could have done on jelly roll pan, too. Peeled off the skin on legs since it wasn’t as “roasty.” Used more veggies than recipe. They were delicious after cooking in the drippings from the chicken/chimichuri sauce.

Cook Monday-Breakfast All Week

Easy Breakfast Casserole. Cut into servings and take with each morning.

Tuesday

Green Curry Chicken with cauliflower rice. Used 5 small zucchini instead of 3 and 2 medium sweet potatoes instead of 1 large. Squeeze of lime was a nice finishing touch.

Wednesday

Instant Pot Butter Chicken. New favorite. Perfectly balanced dish. Used remainder of chicken thighs (from large 3lb-package) from Tuesday night. Had already diced into bite-sized pieces, which saved time. Used 2 bell peppers instead of 1. Last minute, decided to try Easy Paleo Naan (with coconut flour). I had super old baking soda, but these still turned out exceptionally–little savory pancake/corncake type things with a hint of coconut sweetness. Quick to cook.

Thursday

Salsa Chicken lettuce wraps and salad bowls. Dinner ready in 20 mins: with the Instant Pot heating up/cooking, shredding the chicken/preparing toppings. Romaine lettuce for wraps. Serve with fresh jalapeno slices, radishes, olives, cilantro, sauteed bell pepper and onion, green and red onion, chopped tomatoes, salsa and Greek yogurt. Our version of taco night. Chips and tortillas are not missed. Can use smaller romaine leaves to make “nachos.”

Friday

Asian Chicken Thighs (only cook for 30 mins or less because using boneless skinless) with a simple spinach salad. Great flavor and smell. Would definitely be better with skin-on thighs, but this was still tasty.

Saturday

Bubble and Squeak. Didn’t love it.

Sunday

Vegetable Soup. Moving to Tuesday of next week.
