Slow Baked Chili Salmon with leftover Persian Salad. Been very pleased with flavor and simplicity of other The Endless Meal recipes. This salmon may be the best I’ve ever eaten, and that’s not hyperbole. Used it the next few days on toasted bagels with cream cheese, capers and red onion. If you don’t have a toaster, pop bagel in the oven at 350 for 4 minutes.

Thursday
Put into marinade Wednesday night. Korean Paleo Chicken Thighs over cauliflower rice. Put into marinade night before cooking. High on Ryan’s list of favorites. Serve with wasabi finishing sauce from Savory Spice. I doubled chicken recipe–eight thighs (one large package from Sprouts)and double the marinade.

Pad Thai Casserole. New recipe to try. Used jalapenos because store was out of Fresno chiles. Great substitute for pad thai. Fun dish. Took some time.

Sunday
Spicy Mexican-Style Chicken Salad in corn tortillas with fresh cherry tomatoes. Well this was delicious and simple. First, cooked shredded chicken in Instant Pot (one large package of chicken breasts from Sprouts cut in half, 1/2 tsp pepper, 1/2 salt, 1/4 cup water) on Poultry setting and added time until it read 20 minutes. Then finished chicken salad recipe; added 1/4 cayenne to sauce and used two jalapenos instead of one.

Green Eggs and Ham Shashuka with Lemon Dill Pesto. Super easy to make. Fantastic flavor.
