Wednesday

Grilled Buffalo Chicken Salad with Avocado Ranch. Bought a full head of Romaine instead of hearts. Saved big green leaves for lettuce wraps and chopped up rest. Since the chicken thighs were large didn’t use all eight. Assembled salads in individuals bowls. Fresh and flavorful for summer.

Thursday

Instant Pot Ground Pork Vindaloo with Potatoes over brown basmati rice with leftover broccoli slaw. Cooked brown basmati rice in Instant Pot first then wiped down and cooked vindaloo. Used twice as many potatoes as recipe because had some I needed to use up. Topped with some Greek yogurt, fresh tomato and a smidge of chopped red onion to cool it down … and some jalapeno just because. Will make again.
