Week of Jan. 7, 2018

Pictures are taken right before we eat, so they’re not pretty but real life.

Sunday

Sweet Potato Crust Pizza. Decided to try while watching The Kitchen on Food Network. Easy and super delicious. Added black olives and topped with chopped flat leaf Italian parsley. Will experience with different flavors next time. Don’t love broccoli rabe. Fun alternative to standard pizza and not a gut bomb.

Monday

Instant Pot Butter Chicken. Go-to cozy meal. The best. I add spices at same time as chicken and bell peppers (I use 3) at same time as tomato sauce. I cook for 10 minutes instead of 8.

Tuesday

Chicken & Broccoli Twice-Baked Spaghetti Squash. Another recipe from The Kitchen. Roasted spaghetti squash night before (didn’t roast it for the full 90 minutes). Also night before, cooked chicken breasts (halved because Sprouts chicken breasts are super thick/huge) in Instant Pot on Poultry setting for 20 minutes. Sprinkled with salt and pepper prior to cooking. Will use three halves for this recipe. Using frozen broccoli.

Wednesday

Out

Thursday

White Chicken Chili. Already cooked the chicken breasts, so may adjust cooking method or add in at same time as corn.

Week starting Jan. 2, 2018

Pictures are taken right before we eat, so they’re not pretty but real life.

Tuesday

Mexican Chicken Pozole Verde. Used half package of boneless skinless chicken breasts (instead of bone-in with skin). This will be faster the next time I make it now that I know the process. It was refreshing and cozy at the same time. Like a Fresca/hot cocoa combo. Had to make the verde salsa in batches due to size of my food processor. May add a habanero to the mix next time.

Wednesday

Slow Cooker Jerk Chicken (used half the salt) with slaw and Vegan Pumpkin mac and Cheese. Used other half of chicken breasts and package of drumsticks. I’m not vegan, but this mac and cheese recipe was fun to try and truly tasted like normal. Used coconut oil instead of palm shortening. Will definitely do again because it was ready to eat in less than 10 mins. This jerk chicken is an easy weeknight staple.

Thursday

Pumpkin and Chorizo Soup. Topped with chopped red onion, cilantro, jalapenos and some Greek yogurt. Always simple and scrumptious. Go-to meal.
