Mole Verde Roasted Chicken (used a rotisserie chicken) with Mexican Rice. Used three jalapenos for sauce and blended with immersion blender (in the pot) because I don’t have a blender; took a while to do it. Used long grain rice for Mexican rice (had to cook it a bit longer & add more broth; also added 1/4 tsp cayenne). This was bright and vibrant. Will definitely make again. Much tastier than it looks.





Chicken Parmesan using leftover sauce (dressed up Trader Joe’s salt-free marinara with fresh herbs, spices and frozen broccoli & mushrooms)

Jerk Rubbed Chicken Thighs with Homemade Mango-Habanero Hot Sauce and simple arugula salad.



Instant Pot Korean Beef with Indian Fried Dill Potatoes. Random combination but delicious match. Often use sweet potatoes instead.



Instant Pot Dal Makhani. One of my favorite go-to easy meals.
