Tuesday

Instant Pot Keema over Spiced Sweet Potato Hash Browns (shortcut: run potatoes through shredding attachment on food processor). Keema: Used ground turkey instead of beef (on sale and leaner). Hash Browns: Doubled recipe. Turned temp down to 400 instead of 350 because I made big patties. Will definitely make this again.

Wednesday

Instant Pot Korean Beef with Indian Fried Dill Potatoes. Restaurant quality. Use sweet potatoes instead of russet.

Thursday

Chipotle Dijon Turkey Meatballs (use Greek yogurt instead of sour cream/heavy cream) with some roasted green beans (toss with olive oil and roast at 400 for 20 mins). Wrapped 1½ meatballs in green leafy lettuce and topped with sauce and chopped tomatoes & jalapenos. New favorite.

Friday

Creamy Roasted Red Pepper Steak and Pasta but using Horseradish Crusted London Broil recipe instead of London Broil recipe with pasta. Didn’t want to mess with my mandolin, so just tossed the squash and zucchini with olive oil and roasted at 400.

Tuesday

Atkilt (Spiced Ethiopian Vegetable Stew. Easy and cheap meal. Added a little cayenne as well. Topped with a dollup of plain Greek yogurt. Perfect Monday night meal if you’ve indulged over the weekend.

Treat

To use up old bananas–Flourless Peanut Butter Banana Oatmeal Cookies. Doubled recipe. Used Jif instead of natural PB, raisins instead of chocolate chips and regular oats instead of quick. Addicted to these. Store in fridge; microwave for 15 seconds.

Sunday

Breakfast for dinner: Spicy Rosemary Sausage and Potato Breakfast Hash  with side of fresh tomato. Used whole serrano (with seeds), and it really packs a nice heat. Filling meal.

Monday

Korean Paleo Chicken Thighs over cauliflower rice. Put into marinade night before cooking. High on Ryan’s list of favorites. Serve with wasabi finishing sauce from Savory Spice.

Tuesday

Instant Pot Black-eyed Peas and Ham. Both Sprouts and Walmart were out of dried black-eyed peas. Made with navy beans. Comfort meal for the win.

Wednesday

Crock Pot Thai Chicken Soup (may use vermicelli or zucchini noodles; gametime decision). Used zucchini noodles.

Thursday

Italian Artichoke Bake with Basil Cream Sauce. Makes the house smell incredible while baking. Good for a colder day–heavy/hearty.

Friday

Chipotle Dijon Turkey Meatballs with spinach salad or wrapped in green leafy lettuce. Make sauce using Greek yogurt instead of cream.

Saturday

Green Eggs and Ham Shashuka with Lemon Dill Pesto. Super easy to make. Fantastic flavor.
