Jerk Rubbed Chicken Thighs with Homemade Mango-Habanero Hot Sauce and simple arugula salad (groceries left over from last week). This is jerk rub such a good seasoning blend to have on hand.

Sesame Spiced Tuna with crunchy salad (from Trader Joe’s). Bought two large fillets and cut them in half after cooking, which fed two people twice. Don’t have mustard seeds on hand; got only what I need (1 tsp) from Sprouts bulk spice section. Also paired with leftover mango, radishes and tomato slices. Ate leftovers cold the next day with tomato. Delicious and impressive looking.
Chicken Korma with Cauliflower Rice. This was good but not “knock your socks off”/must have again. Solid meal. Used a whole bag of peas because we’re pea lovers. If I make it again, will decrease cinnamon to 1/8 tsp.
Grilled chicken breasts and grilled romaine
Slow Cooker Pulled Pork with Homemade Kansas City Style BBQ Sauce on top of baked sweet potatoes. Actually followed the recipe this time, and it was pretty damn good. Used a bone-in pork roast because it was cheaper ($1.69/lb). The homemade sauce is a must.
