Instant Pot Black Eyed Pea Curry over cauliflower rice
Slow Cooker Pulled Pork with Homemade Kansas City Style BBQ Sauce on top of baked sweet potatoes. Didn’t have time to put pork loin roast in slow cooker at lunch; instead put in Instant Pot on manual for 45 minutes (seared it on saute first; not sure if this was beneficial or not). Still turned out really well. BBQ sauce was mmmm. Added some chipotle powder as well.

Instant Pot Curried Cream of Broccoli Soup. Used more broccoli than recipe and ghost pepper curry powder. Topped with a dollup of plain Greek yogurt. Makes a lot of soup. So much better than run-of-the-mill fatty broccoli cheddar soup. Put Korean Paleo Chicken Thighs into marinade; refrigerate overnight.
Instant Pot Dal Makhani (lentils). Amazing. Cost less than $3 to make. Used olive oil instead of avocado oil. Didn’t have time to soak lentils except for 20 mins. Topped with green onion, cilantro and some plain Greek yogurt.
Baingan ka Bharta (Indian Eggplant). Typically use 3 eggplants instead of 2, roast for 30ish minutes (don’t broil after). Sub coconut oil or olive oil for avocado oil; top with a fried egg and cilantro. One of my absolute favorite dishes. Ridiculous.
