Tuesday

Spaghetti (zucchini spaghetti) & Meat Sauce. Threw together with items at the house: ground beef, chopped onion, canned tomatoes, black olives, garlic, zucchini noodles. Topped with some fresh basil from the porch.

Wednesday

Mulligatawny Soup. One of my favorite meals. Used butter instead of ghee, 3 celery stalks instead of 1, and 3 carrots instead of 2. Omitted white basmati rice but may cook some to have with leftovers.

Thursday

Sweet Korean Paleo Chicken Thighs with Cauliflower Rice. Put into marinade on Wednesday night. One of Ryan’s favorite meals.

Monday

Ground Turkey Brussels Sprouts Skillet. Big fan of shredded Brussels sprouts. Used more than recipe. Used outer leaves to make Brussels sprouts chips (toss with bit or olive oil and bake at 350 for 10ish mins flipping at 5-min mark).

Tuesday

Roast Chicken and Paleo Honey Roasted Carrots. The chicken is a Pioneer Woman recipe, so there’s butter. However, it doesn’t have the other Southern staples (cheese, cream of whatever, etc.), so you’re fine. It was incredible, super easy and cheap! Including the carrots, this meal cost under $7. It fed two adults dinner and lunch the next day.

Wednesday

Pork Roast with Dijon Glaze with roasted butternut squash. Feeling lazy, used precut butternut squash from Trader Joe’s. It was a huge roast, so repurposed it for breakfast with eggs and jalapenos. Smells great when cooking.

Savory Sriracha Oatmeal. Didn’t want to go out or cook for a long time and found this recipe. Omitted cashews. Topped with parsley from my porch. Yum. Easy.

Monday

Baingan ka Bharta (Indian Eggplant). Use 3 eggplants instead of 2 and roasted for 30 minutes (didn’t broil after). Sub coconut oil for avocado oil; top with a fried egg and cilantro. One of my absolute favorite dishes. Ridiculous.

Healthy Hamburger Helper. Used ground  turkey and eliminated coconut flour. Used 3 sweet potatoes instead of 2. Used 1½ bunches of spinach. Go-to meal. Made because I had all ingredients in fridge except the meat.
