Monday

Chipotle Chicken and Green Beans. Made this with green beans from someone’s garden. It was so easy and ridiculously good. The chipotle powder is a must and can be picked up from Savory Spice.

Tuesday

Summer Squash Meatball Casserole. Made this previously. Fairly quick to throw together and tastes better the second day once flavors set in.

Wednesday

Chicken Enchilada Bake (will use 1½ chicken breasts from package of 3) with Jicama Slaw. This slaw is a go-to for summer cookouts. This enchilada bake is a healthier substitute for the King Ranch Casserole we all grew up eating. These ingredients are a little bit better for you than cream of chicken soup, tortilla chips and cheese.

Thursday

Grilled chicken (will use remaining 1½ chicken breasts from package of 3) with Indian dry rub (will half recipe) and Indian Pineapple Cauliflower Rice (will substitute raisins for currants)

Friday

Grilled Sprouts Andouille Sausage With Grilled Zucchini

Leftover Asparagus, Dill & Onion Egg Casserole

Tuesday

Meatloaf (manager’s special from Sprouts) with Fruity Coleslaw (picked up ingredients last week)

Wednesday

Pizza Spaghetti Pie. Legitimate pizza substitute. Used a 9×13 dish instead of 8×8, which I felt was too small. Added some olives. Will add green bell pepper and/or mushrooms next time. Used hot Italian sausage from Sprouts, but could use any ground meat or do an all veggie version. So damn good. Used entire 14 oz jar of pizza sauce instead of just 1 cup. Used whole onion instead of half.

Thursday

Romaine-wrapped burgers with Bacon Lime Sweet Potato Salad. Served burgers with a fried egg on top without lettuce wrapped.

Friday

Cilantro chicken nuggets with Zucchini Cakes. Chicken nuggets are a little messy to make, but the flavor was intriguing.

Leftover Crockpot Cuban Pork Lettuce Wraps

Tuesday

Grilled Rockfish with Chunky Mango-Ginger Sauce. Using leftover chardonnay from my house instead of buying dry sherry. Grilled about 2 lbs of rockfish in foil packets because the fillets were not super thick. Used 4 mangos. The sauce packed a lot of flavor and paired well with the mild white fish. Solid summer dish. Reheated well the next day for lunch.

Wednesday

Horseradish Crusted London Broil with Creamy Roasted Red Pepper Pasta. The next time London Broil goes on sale, this will be happening again. So good. The pasta was top notch. Used the food processor’s slicing blade to make “noodles,” which gave it a potato au gratin texture that was quite lovely. Sauce was legit.

Thursday

Pork Chops with Garlic Sage Butter with Celeriac Mash. Saving celeriac mash recipe for another time. Didn’t want to mess with Whole Foods. Served chops with leftover Creamy Roasted Red Pepper Pasta. Chops were okay. I didn’t love them.

Saturday

Grilled Pineapple Country Style Ribs (using ribs instead of pork chops) with Fruity Coleslaw. Saving coleslaw for next week. The ribs were delicious.

Sunday

Asparagus, Dill & Onion Egg Casserole. The fresh dill sets this off. Yum. Served with a few slices of grilled chicken for dinner on Sunday.

Monday

Green Chile Chorizo Cauliflower Casserole. Didn’t get home until late and was able to quickly throw this together. Great flavor combo. Might try ground pork/turkey/chicken with a tiny bit of homemade taco seasoning instead of chorizo in future.

Tuesday

Grilled Rosemary-Rubbed Pork Chops with Grilled Corn. Super cheap meal to prepare. The rosemary amped up the pork chops. Ate on the road for lunch the next day, and it still tasted great cold.

Wednesday

Kielbasa with Red Cabbage and Broccoli Slaw. Using andouille sausage instead of kielbasa. Sprouts had andouille from the butcher counter for $3.99/lb vs packaged kielbasa for $5.99/12 oz. Beautiful colored dish. The sausage flavor infuses in the cabbage as it sits overnight.

Grilled Chicken Drumsticks with Garlic Marinade with Oven Baked Zucchini Fritters. Easy.

Friday

Paleo Chicken Burgers with asparagus. Ended up saving the asparagus. Served burgers with some parmesan shavings and leftover zucchini fritters. Will go without Italian seasoning next time.

Saturday

Breakfast: Tex-Mex Hash Breakfast Casserole. Using ground chicken thigh instead of beef because it was cheaper and had a later “use by” date. Used both red and green enchilada sauce. Also served it as a side to the lettuce wraps. Will repeat. Topped with Greek yogurt and cilantro.

Lunch/Dinner: Crockpot Cuban Pork Lettuce Wraps. Good recipe for a weekend. Pork cooked while I ran errands and then I had a flavorful yet still light meal when I got home.
