Tuna Kebabs with Ginger-Chile Marinade. These were more filling than you’d think. Nice alternative to the typical seared Ahi Tuna steak. Served with some wasabi finishing sauce.

Buffalo chicken casserole. Used ground chicken thighs instead of ground chicken breasts. Cheaper. This is an ideal potluck dish.

Friday

Grilled 85/15 beef burgers (lettuce-wrapped) and chopped kale salad (Favorite salad. Double recipe. Use raisins and slivered almonds because they’re cheaper).

Grilled jerk chicken breasts on top of chopped spinach salad w/radishes, olives, red cabbage, carrots and walnuts. Topped with Greek yogurt mixed with cilantro and lime juice.

Mango Avocado Salsa on Pan Seared Salmon

Monday

Mango Avocado Salsa on Pan Seared Salmon. Doubled the mangos, avocado and cilantro in salsa. Cooked the salmon for about 2.5 mins on the reverse side instead of just 30 seconds. Clean and quick to throw together. Sweetness of the mango paired amazingly with the fish.

Tuesday

Artichoke Lemon Pesto Chicken Pasta. Made this a couple weeks ago. It’s amazing.

Wednesday

Southwest Turkey Sliders over Spicy Avocado Slaw. Turkey patties and slaw sound like a boring meal, but this was surprisingly flavorful and well-balanced. Might add black and/or green olives to slaw next time. Made full size burgers instead of sliders.

Thursday

Sweet Korean Paleo Chicken Thighs with Cauliflower Rice. Mixed together marinade on Wednesday and let chicken thighs marinate overnight. (Can find the gochujang at Sprouts.) Used more chicken than recipe. After baking for 30 mins, broiled at 425 for 10 mins; will broil for 15 mins next time. Garnished with some cilantro in addition to green onions. This will be a go-to recipe.

Monday

Slow Cooker Tomatillo Pork Chili Verde. Prepared and cooked on Sunday. Could have used a little less lime juice.

Tuesday

Summer Squash Meatball Casserole. Super quick and easy to put together & throw in the oven, which made it taste even better.  Food processor shredding attachment is my new fav. Cooked in Dutch oven instead of skillet. Cheap ingredients.

Wednesday

Steaks and Grilled Sweet Potatoes with Lime & Cilantro. Didn’t want to mess with grilling the sweet potatoes. Boiled them and then mashed them (with skin on) with 2 tbsp of butter, lime zest and cilantro. Quite good.

Thursday

Spaghetti Squash Noodle Bowl with OMG Sauce. Well, this sauce really is outstanding. Used tahini instead of sunbutter. Cooked spaghetti squash 10 mins longer than it lists.

Mexican Breakfast Casserole. We’ve been making breakfast casseroles every Saturday morning. It’s served as Saturday breakfast for two, a snack later in the day and Sunday breakfast for two. Used two sweet potatoes and two jalapenos. This was hearty.

Sunday

Lunch: Romaine lettuce-wrapped burgers with red onion, cilantro, jalapenos and some hot mustard. Seasoned burgers with a yummy new spice, Mt. Elbert All Purpose Seasoning from Savory Spice.

Dinner: Easy Grilled Chicken with a spinach salad (chopped spinach, sliced radishes, diced tomato, red onion, soynuts, chopped broccoli, diced jalapeno). Marinated the chicken for five hours.

NEWS: We bought a grill with the weather the way it is lately. Looking forward to finding new dishes to use it with.

Sunday

Jerk chicken sweet potato hash with mango habanero sauce and poached eggs. Watched this on Brunch at Bobby’s (Bobby Flay) and had to make it. So damn good. Will use whole habanero in sauce next time instead of just half. Also, may used a little less vinegar.

Monday

Fajita lettuce wraps. Used stew meat (on sale) and cooked longer to tenderize it. Veggies were delicious.

Tuesday

Baked cabbage casserole (go-to recipe) Way to use up leftover cabbage from slaw. Cooked the pork Sunday as it was expiring since we didn’t use it last week. Will prepare Tuesday. Shared some leftovers with a co-worker. He loved it. Healthy and homey.

Flank steak with cilantro almond sauce. Flank steak is a bit pricier but worth it. Don’t try to sub it something different. The sauce was perfect.

Thursday

Zucchini noodles with chopped tomatoes, chopped onion, and shrimp

Breakfast: Easy Breakfast Casserole. Used two sweet potatoes and a bit more spinach and sausage. So good. It’s the healthy version of the one your mom used to make with white bread, Jimmy Dean and cheese.
