Balsamic roast beef with carrots and sweet potatoes, side salad with roasted Roma tomatoes

Tuesday

Tomato and olive braised pork roast or pork shoulder roast with tomatoes with sautéed okra

Wednesday

Yucatan country style pork ribs with pickled onions (manage with the spices I have) and Mexican corn on the cob

Friday

Breakfast for dinner. Uncured bacon and veggie egg scramble with fruit plate. Or sweet potato hash with caramelized onions and baked eggs.
