Week starting Feb. 8, 2016

Monday

Chicken Broccoli Casserole. Cooked chicken breasts in slow cooker for 6 hours. Used bagged broccoli florets (easier and same price as chopping up heads). Will make again and add another bag of broccoli.

 

Tuesday

Gingered Carrots with Mahi Mahi with Avocado Goodness (avocados 2/$1 at sprouts this week & mahi mahi $4.99/lb) doubling the recipe for carrots and fish. Carrots were refreshingly different. Fish was good and healthy. Not super saturated with flavor which was a good contrast to carrots. Went ahead and scooped out the avocados and just drizzled the dressing on top.

 

Wednesday

Punjabi Style Chicken Soup. This calls for thighs, but I will just use some of the chicken breasts I cooked on Monday (since I cooked 6 huge chicken breasts). Excited to make this again. Perfect for a cold week. This makes a ton. Topped with cilantro and a drizzle of sriracha.
